  • 熟糯米粉5g
  • 咸蛋黄6个
  • 面粉100g
  • 转化糖浆75g
  • 花生油25g
  • 枧水1g
  • 奶粉10g

Steps to make 莲蓉蛋黄月饼

  • 1.莲子提前用水泡软
  • 2.压力锅压15分钟,让其软烂
  • 3.倒入料理机中打成糊
  • 4.把莲子糊倒入锅中,小火炒,稍微成团时加入一次橄榄油,
  • 5.继续炒至比较干的状态,此时可以再加一次橄榄油,加糖
  • 6.炒至糖溶化后,就加入一点点熟糯米粉
  • 7.炒均匀后,第三次加橄榄油
  • 8.直到馅料看起来油润细腻,关火晾凉备用。
  • 9.转化糖浆、油、枧水全部放入盆中,充分搅拌至融为一体的糖浆
  • 10.加入面粉和奶粉,和成面团盖上保鲜膜饧一小时左右。
  • 11.我买的蛋黄很大,重量大约在18克--22克,把莲蓉分成约40克的剂子,最后连着蛋黄一起称重,总重是60克。
  • 12.用莲蓉馅包裹蛋黄,包好备用,面团分成20克的剂子。
  • 13.包好入模成型,并在烤前喷水
  • 14.烤箱180度预热5分钟,
  • 15.入烤箱烤5分钟。拿出来刷蛋液,然后继续烤15分钟。
  • 16.烤好的月饼晾凉后10个小时左右即可回油。我同时烤了两种月饼,不浪费能源,哈哈。
