黑芝麻坚果月饼
中秋节时做的月饼,也是第二次做月饼,技巧还有待于提高哈。话说这月饼都下肚两三个月了,菜谱才发出来,这要不清理手机还想不起来呢*我也是醉了。

  • 中筋面粉100克
  • 转化糖浆75克
  • 枧水2克
  • 花生油25克
  • 黑芝麻蓉250克
  • 坚果碎50克

Steps to make 黑芝麻坚果月饼

  • 1.转化糖浆加枧水搅匀,加花生油搅拌成乳状
  • 2.加入过筛的面粉
  • 3.拌匀成面团,静置2小时备用
  • 4.网购的低糖黑芝麻蓉,我又加了些坚果碎
  • 5.我用的50克模具,皮:馅=2:3,即20克面皮,30克馅
  • 6.取一份面皮按扁,包入一个馅
  • 7.两手边转边往上推面皮,尽量用力均匀
  • 8.封好口,稍整理
  • 9.模具里撒点面粉防粘,放入一个月饼生胚
  • 10.压成型,表面喷水,入预热好的200度烤箱中层,烤5分钟后取出,刷一层蛋黄水(一个蛋黄+1大匙水),再烤15分钟左右即可
  • 11.手残党,蛋黄水刷的不均匀,烤出来深浅不一,但不耽误吃哈
  • 12.烤好的月饼放置两三天,回油后才好吃。
