多彩冰皮月饼
中秋节快到了,提前做了冰皮月饼,新鲜出炉的昨日黄花正当时。

  • 大米粉70克
  • 牛奶400ML
  • 白糖粉100克
  • 紫薯30克
  • 黄心红薯30克
  • 抹茶粉20克
  • 大枣100克
  • 红小豆300克
  • 蜂蜜少许
  • 调和油36克

Steps to make 多彩冰皮月饼

  • 1.牛奶加入澄粉,待澄粉完全融化在牛奶里,添加调和油混合均匀,再加入白糖粉搅拌,待白糖粉完全融化。
  • 2.先筛入糯米粉混合均匀,再筛入大米粉搅拌均匀,完全搅拌均匀后。
  • 3.放入已烧开的蒸锅里,加盖蒸(加盖是为了防止落入水蒸汽),盖锅盖大火蒸10分钟。
  • 4.关小火,取出搅拌均匀(防止受热不匀),再加盖大火蒸30分钟。
  • 5.取出晾凉。
  • 6.晾凉后,活成面团,成冰皮月饼面皮面备用。
  • 7.绿色面:取面皮面一块,加入抹茶粉,活匀备用。
  • 8.紫薯蒸熟,压泥过滤,微波炉叮一会,排掉部分水份,和面皮面活匀成紫色面备用。
  • 9.黄芯红薯蒸熟,压泥过滤,微波炉叮一会,排掉部分水份,和面皮面活匀成黄色面备用。
  • 10.剩余部分白色面皮面备用。
  • 11.准备馅料:红小豆、大枣先浸泡12小时,上锅蒸熟,大枣去皮、去核,红小豆压成豆沙。红小豆沙、大枣泥微波炉转几分钟,除去部分水份,添加玫瑰酱、蜂蜜混合均匀成馅料备用。
  • 12.馅料分成28克每份,团成圆球备用。
  • 13.把两种或三种颜色的面各取适量(面团合计约25克),把面团按压在一起,拍成园饼,包入馅料,收拢包成球状成胚。
  • 14.沾均匀熟米粉。
  • 15.轻轻压入模具。
  • 16.左敲敲、右敲敲,脱模扣出。
  • 17.所有做好的冰皮月饼。
