改版麻辣烤鱼
之前上传过一次烤鱼,感觉不是很满意,这次发个清楚版的。

  • 郫县豆瓣3勺
  • 李锦豆豉1勺
  • 2勺

Steps to make 改版麻辣烤鱼

  • 1.把鱼从中间分成两半,划几刀,身上放上姜片,葱段,盐,料酒腌制几十分钟,(盐放的多才会有味)
  • 2.腌好的鱼放在烤盘上,铺上姜和葱,里里外外刷上厚厚的蚝油,色拉油最后在撒些辣椒粉和花椒粉增加味道,烤制220度20分钟。
  • 3.准备好的辅料。
  • 4.鱼中,我配的是青笋和芹菜,配着鱼挺好吃。
  • 5.把菜提前焯一下。
  • 6.炒锅内放入适量的油,烧热,放入姜末蒜炒香,再放入郫县豆瓣、和豆豉炒香。 再放入干辣椒,花椒麻椒,炒香,加入清水烧热。
  • 7.最后放入青笋,芹菜煮一分钟即可。
  • 8.烤好的鱼。
  • 9.把熬好的汤汁浇在烤好的鱼身上,再烤制几分钟即可。再在炒锅里加入适量的香油烧热加入干辣椒和花椒爆炒,趁热浇在鱼身上。
