元宝肉
“元宝肉”是用鸡蛋和猪五花肉烧制而成。湖北人过年欢度春节时,全家老幼团聚在一起,在农历腊月三十晚上吃团年饭的家宴上,大家都喜欢吃这个菜,以示在新的一年里财源茂盛,富贵吉祥,万事如意。
“元宝肉”名称美,菜色美,造型美,个个似真元宝。蛋肉相映,滋味各异。
这里用鹌鹑蛋,代替鸡蛋,营养价值更高,更美观些,菜色更精致!

  • 猪五花肉500g
  • 鹌鹑蛋20个
  • 八角2个
  • 30g
  • 5g
  • 香叶2片
  • 冰糖20g
  • 10g
  • 老抽1勺
  • 料酒4勺

Steps to make 元宝肉

  • 1.五花肉切小方块
  • 2.肉放冷水中,烧开,煮15分钟,捞出,放热水中洗一遍,捞出备用。
  • 3.水开后鹌鹑蛋煮四分钟,取出,放冷水中激一下,剥皮备用;葱切段,姜切片;盐和一粒冰糖备用
  • 4.油锅烧热,放油,冰糖,糖炒化变色后,放香叶,八角,煸香
  • 5.放入五花肉翻炒,使肉的各个面都沾上糖色
  • 6. 加入老抽,料酒
  • 7. 加入没过肉的水,小火焖煮
  • 8.加鹌鹑蛋、葱、姜,焖煮
  • 9.加盐,冰糖,继续焖煮至收汁
  • 10.装盘,漂亮吧!
