Steps to make 糖醋蒜

  • 1.新鲜紫皮大蒜。
  • 2.剪去蒜茎,将大蒜外衣剥剩最里面一层,洗净,晾干。
  • 3.切去根须。
  • 4.白糖放在小锅里,(可以根据自己的口味调整糖和醋的比例)。
  • 5.加盐、陈醋开火微煮,不用煮沸,能把糖融化即可。边加热边用勺子搅动,加速融化,熬好的糖醋汁放置凉透。
  • 6.将蒜放进干净无水的瓶子里。
  • 7.将放凉透的糖醋汁倒入瓶中,要将蒜整个泡在醋汁里,把瓶子密封盖紧,放阴凉的地方保存。腌制一个月后可以食用,但还有些辣,我家一般是腌制了两个月才食用,那时糖醋蒜已经入味了。
  • 8.这些是去年腌制的糖蒜,现在吃口感依然很好。
