苦瓜酿肉
一说起苦瓜,许多人都会被它的苦味所击退,其实苦瓜虽苦,但与其他食材搭配时并不会将苦味渗入别的材料中,被人们称为君子菜。而且苦瓜的营养价值也非常高,具有清热益气、降血压、降血脂、抗癌、美容肌肤等功效。
个人认为苦瓜与肉是最佳搭配,因为肉的鲜香可以让苦瓜的苦味平和许多,不会那么直接,吃起来还有淡淡的清香味,家人都非常喜欢。

  • 鲜酱油5g

  • 玉米淀粉8g
  • 红椒末3g
  • 白胡椒粉1g
  • 鸡精1g

Steps to make 苦瓜酿肉

  • 1.备好食材:苦瓜和猪肉末
  • 2.肉末里分别放入盐2g、姜末、葱花、鲜酱油、糖、玉米淀粉、白胡椒粉、鸡精
  • 3.加入少许清水,将肉馅顺一个方向搅打上劲备用
  • 4.苦瓜洗净后切成小段(长短随自己喜欢),并用小刀将瓜内的籽和瓤掏干净
  • 5.用1g盐将苦瓜腌制约10分钟
  • 6.取一小块新鲜红椒,洗净后切成碎末
  • 7.苦瓜腌好后,先在苦瓜内壁上抹上一层干淀粉
  • 8.再将肉馅塞进去
  • 9.依次做完后放入蒸锅,盖上锅盖中火蒸制15分钟
  • 10.蒸好后,将盘里的汤汁倒入炒锅内(如果汤汁不多,可以再加入适量清水),开小火,待汤汁微开,慢慢倒入水淀粉勾薄芡,并用锅铲不停的调拌
  • 11.放入红椒末调匀即可(如果嫌味淡,可以调入少许盐)
  • 12.最后将汤汁浇到苦瓜上就完成了!
