凉拌酸辣臊子面
这几天除了感觉闷热还是闷热那,就学了这道臊子面来开胃,只不过把人家这道面食从头到尾改了个遍,臊子面是陕西的风味小吃,品种多达数十种,以薄、筋、光、汪、酸、辣、香等特色,吃口柔韧滑爽,其中以岐山臊子面享誉最盛。臊子面的特点是面条细长,厚薄均匀,臊子鲜香,面汤油光红润,味鲜香浑厚而不腻。而岐山哨子面乡土风味尤为浓厚,以酸辣著称,因为一向不怎么喜欢吃细面条,所以这次做的面是用的烩面,还把汤汁去掉了,改成了一道酸辣凉拌面,而且这样的搭法吃起来非常的好吃。
    还有这次比较郁闷人的是大热天的在厨房忙活了一上午,在做好准备拍照的时候,相机突然坏了,拍了2张正常的臊子面还给模糊了一部分,要不要这么倒霉呀。。。

Steps to make 凉拌酸辣臊子面

  • 1.和成稍软些的面团醒30分钟。
  • 2.搓长切割成一块一块的。
  • 3.揉成条按扁。
  • 4.擀成小长片。
  • 5.每个面片均匀的涂抹上油醒1h。
  • 6.锅中倒入适量的水煮开,面片用手一点一点的拉长下入锅里,点几次水煮熟,再用冷水冲凉。
  • 7.菜切成小块备用。
  • 8.锅中倒入适量的油下入五花肉翻炒。
  • 9.出油后倒入五香粉,郫县豆瓣酱,豆豉酱,盐调味。
  • 10.炒均匀。
  • 11.倒入醋。
  • 12.煮个1,2分钟出锅备用。
  • 13.豆角,香菇翻炒下。
  • 14.倒入一碗水煮熟。
  • 15.倒入蛋皮,倒入盐,十三香,醋调味,关火备用。
  • 16.油菜和豆芽在锅中焯熟。
  • 17.盛一碗面条浇上些五花肉一些菜撒些葱花,在锅中倒入辣椒面油炒香,趁热浇在面条上就好了。
  • 18.成品。
