  • 1.先把凉皮水活好。往面粉里加入盐搅匀,水一点点往面粉里加。这样面粉里不容易起面疙瘩。直到把所有面粉和水充分搅匀,盖盖子放一边醒发1~2小时,中间搅拌几次。
  • 2.面筋粉倒水里搅匀,然后静置20分钟。
  • 3.20分钟大概就是这样。不用担心水多,这个过程就是让面筋吸饱水分。
  • 4.凉皮的面筋需要蜂窝状,所以面筋不要力揉,用手抓成团即可。然后加入泡打粉,用手抓匀即可,放一边醒发10分钟左右。
  • 5.醒面筋的空挡把蒜磨成蒜泥,加少许盐倒入纯净水,搅匀放冰箱冷藏备用。
  • 6.醋,生抽,水,花椒,八角,桂皮,辣椒用小火慢慢煮出香味关火静置备用。
  • 7.豆芽焯水,黄瓜切丝备用。
  • 8.此时准备工作基本就绪,可以开始做凉皮了。分别准备一个可以放下凉皮罗罗的锅和盆,另外再用一个小奶锅加入半锅水烧开,放入面筋煮20分钟。
  • 9.舀一勺醒好的面粉水摇匀。
  • 10.水开放入锅中盖锅盖,大火大概两分钟左右。看见凉皮起大泡就可以了。
  • 11.盆里放凉水,凉皮取出水上降温。
  • 12.撕下来即可,重复操作,蒸完所有凉皮。
  • 13.煮好的面筋切成需要的大小。
  • 14.特别筋道。
