黑芝麻作为食疗品,有益肝、补肾、养血、乌发、美容等作用,是极佳的保健美容食品,用其制作月饼,油润细腻,气味清香。本款月饼,表皮金黄,花纹清晰,甜度适中,皮酥馅软,老少皆宜。

  • 中筋面粉200克
  • 转化糖浆150克
  • 枧水2克
  • 奶粉10克
  • 食用油50克
  • 熟糯米粉150克
  • 黑芝麻粉300克
  • 白糖60克
  • 麦芽糖30克
  • 食用油60克
  • 鸡蛋1个

Steps to make 黑芝麻月饼

  • 1.制作黑芝麻馅。将炒熟的糯米粉、黑芝麻粉、白糖、麦芽糖放入大碗中,加入60克食用油、适量水,拌匀成团,黑芝麻馅做好了。
  • 2.将转化糖浆、枧水、奶粉、50克食用油倒入大碗内混合,筛入面粉,用刮刀拌匀至无颗粒的面团,包上保鲜膜放入冰箱冷藏1小时。
  • 3.将馅料、面团按8:2(或7:3)的比例分好,揉成圆球。
  • 4.取一小面团,按扁,放上馅料。
  • 5.用虎口慢慢收紧封口后,放入掌心揉圆。
  • 6.放到面粉里滚一圈,抖掉多余的粉。
  • 7.将包好、滚圆的饼坯放进模具里,模具倒扣在铺了油纸的烤盘内,轻轻往下压,脱模。
  • 8.将鸡蛋打散备用。
  • 9.烤之前先在月饼表面喷些水。烤箱预热,160度,中层,上下火,烤20分钟(根据自家烤箱确定)。
  • 10.烤5分钟定型后取出,先放凉几分钟,刷上一层薄薄的蛋液,再继续烤15分钟左右,上色即可。
  • 11.烤好后取出,凉透,密封包装,室温放置2-3天,表皮回油后即可享用。
  • 12.皮薄馅多。
