【冰皮月饼】独爱那一份冰清玉洁的纯
时间过得真快,很快就又到中秋佳节了。趁着还有时间,赶紧做几种月饼练习练习,好在中秋节的时候在亲朋好友面前露一小手!嘿嘿,今天就先做一款冰皮月饼吧!

其实,一直都特别喜欢冰皮月饼,喜欢它那种冰清玉洁的纯,总让人有种依依的爱怜。
新败了一套模具,心形的,呵呵,俺就是那么喜欢心形的东东,做个月饼也要这么滴充满爱心,中秋嘛,团圆的日子,当然是充满了爱呢!我--爱--你,嘿嘿,简单的一句话,无论老女老少,都可以大胆说出来,无论是对父母的爱、对老公的爱,对老婆的爱、对儿女的爱、对亲朋好友的爱等等,只要心中充满着爱,就要勇敢说出来,那一份甜蜜,会更加浓烈!

  • 牛奶100克
  • 椰浆90克
  • 白糖40克
  • 色拉油20毫升
  • 糯米粉45克
  • 粘米粉35克
  • 澄粉20克
  • 木瓜馅300克

Steps to make 【冰皮月饼】独爱那一份冰清玉洁的纯

  • 1.称量好材料。将糯米粉、粘米粉、澄粉过筛后混合均匀。
  • 2.将牛奶和椰浆、白糖稍微加热,使白糖完全融化。
  • 3.加入色拉油,搅拌均匀。
  • 4.倒入混合好的糯米粉、粘米粉、澄粉。搅拌均匀后静置30分钟。
  • 5.上笼大火蒸15分钟。
  • 6.搅拌均匀至顺滑的面团,盖上保鲜膜,晾凉后即成冰皮。
  • 7.将少许的糯米粉放入炒锅,小火炒熟(至面粉发黄)。这就是糕粉(也叫手粉、熟粉)。
  • 8.将晾凉的冰皮和馅料分别分割成25克一个的份子,分别团成圆球状。(我的模具是50克一个的,我用的是皮:馅料比例为1:1,也可以做成3:2)。
  • 9.手上蘸少许糕粉,取一个冰皮面团,按扁,包入馅料。
  • 10.用拇指和掌心的力量将面皮往上推,直到冰皮将馅料完全包裹。
  • 11.包好的冰皮蘸少许糕粉。
  • 12.月饼磨具安装好,撒进去少许糕粉防粘。把包好的冰皮放进去。
  • 13.在案板上撒上少许糕粉,用月饼模压制成型。
  • 14.做好的冰皮月饼。
  • 15.放置冰箱冷藏室过夜即可食用。
