记得以前去过华人教堂,有两位以前住过韩国的朋友做的泡菜十分好吃,老是想学做,其实在Walmart 也有瓶装出售的,太软烂,但感觉不如自己做,后来从网上搜来了好几个方子,综合一下,学做起来了。很多人说,十个韩国人可以做出十种味道,也没个100%准确的,何况是我们这些学做的呢,做得大概差不离儿吧,千万别跟我较真儿。

  • 大白菜1大棵
  • 大蒜叶1叶
  • 香葱2棵
  • 红椒2枚
  • 青椒2枚
  • 红葱头2粒
  • 柠檬皮1把
  • 樱桃萝卜4枚
  • 柠檬汁1大匙
  • 鱼露1/2大匙
  • 白糖1/2大匙
  • 辣椒粉1大匙
  • 辣椒酱1大匙

Steps to make 家庭韩式泡菜

  • 1.大白菜打竖破半,将里面每片菜叶里面都抹生盐。
  • 2.也在每片菜叶的背面也抹生盐,静置半小时,倒水,用手轻轻搓,再静默约1小时,反复几次直至四至五次。
  • 3.把樱桃小萝卜切片儿。
  • 4.把大蒜叶、柠檬皮切丝、香葱切段,用刀稍拍葱白至裂开、青红辣椒切圈。
  • 5.把大白菜切成段。
  • 6.把大白菜切段后把水抓干净,要反复抓,一次是抓不透的,抓干为止,放入大碗,放入配料。
  • 7.加入柠檬汁1大匙、鱼露1/2大匙、白糖1/2大匙、辣椒粉1大匙、辣椒酱1大匙,戴手套用手和配料混合在一起抓均匀,还是感觉用五爪金龙抓得比较均匀,静置30分钟或以上。
  • 8.时间到可以享用,但入瓶放冰箱三天,更加入味。
