韩式辣炒年糕,自制年糕,冷吃热吃都好吃

Steps to make 韩式辣炒年糕,自制年糕,冷吃热吃都好吃

  • 1.大米粉和糯米粉的比例一般情况是1:1。也可以是2:3或者3:2,大米多些年糕口感比较有嚼劲,糯米多些则比较软糯,看个人喜好。
  • 2.把大米粉和糯米粉按比例倒入容器,分若干次加入水和色拉油,跟和面一样,少加、多次。水和油的比例是5:1,没有先后顺序,只要把粉团揉软揉光滑即可。粉团的手感跟面团不一样,没有筋性也不粘手,挂在手上的湿粉很容易摘下来。
  • 3.把揉好的粉团分成若干小块,在案板上涂抹少许色拉油,把小粉团搓成手指粗细的条,不宜太长,否则上锅时容易断掉。
  • 4.把搓好的年糕条放到笼屉上(要加屉布,不然容易粘)。摆好,每条之间都要留有空隙。上锅蒸10分钟。
  • 5.年糕条蒸好了。
  • 6.把年糕条连屉布一起从锅里取出,放到冷水里。年糕条很容易从屉布上脱落,取出屉布。经多次冲凉,年糕条会变得光滑而劲道。
  • 7.把冷却后的年糕条切成小段,留够当餐要炒的,其余装进保鲜袋,放入冰箱冷冻室,可以保存数月,以后随吃随取,不需解冻,非常方便。
  • 8.蒸年糕条的时间里准备辅料——胡萝卜、洋葱、白菜、大葱、甜不辣(即:韩式鱼饼)、韩式辣酱、白糖。找不到甜不辣也可以用虾皮、海米或者鱼丸(要切片)代替
  • 9.开始炒年糕。炒锅加少许色拉油,油热放胡萝卜片和洋葱条,略略翻炒。
  • 10.加适量水(刚做好的年糕条少加水;冷冻年糕条多加水,因为冻年糕需要炖一会儿才能熟透),再加入甜不辣条和白菜条,翻炒
  • 11.加入韩式辣酱。
  • 12.加入白糖,爱吃甜口可以多加些糖。
  • 13.加入年糕条继续翻炒翻炒,直到汤汁收干,即将出锅时,加入葱段。
  • 14.成了!冷吃热吃均可,韩式的辣是微微的甜辣,一般人都能接受,很开胃哦。
