Steps to make 三鲜豆皮

  • 1.准备材料
  • 2.没买到绿豆粉用面粉代替,最好是绿豆粉弹出来的面皮脆且不易撕裂,糯米蒸熟备用,其余材料切丁
  • 3.肉丁加生粉料酒腌渍后下锅翻炒5成熟捞出备用
  • 4.倒油将笋子、香干、大头菜翻炒至5成熟
  • 5.加入八角、香叶、桂皮、生抽、老抽、胡椒粉,加水与食材平齐,转小火熬至入味儿,汤汁快干的时候放入肉翻炒,盛出备用
  • 6.摊面皮,比较难的一个步骤。用面粉很容易摊的很厚,建议先用冷锅将面皮均匀摊开后再开小火两面煎熟,其中一面打入一个鸡蛋摊平做外皮
  • 7.有鸡蛋的面朝下,将蒸熟的糯米放进面皮上摊平,厚度1cm~1.5cm即可
  • 8.将准备好的卤料均分撒在糯米上,并用力按平
  • 9.将上一步整体翻锅,煎1~2分钟
  • 10.出锅并切块
  • 11.完成装盘即可
