[二月二、吃春饼]咬出春天的味道
从腊月开始直到过了农历二月二日“龙抬头”新年庆典活动才算正式结束。明刘侗《帝京景物略》上说:“二月二日,曰,龙抬头。煎元旦余饼,熏床炕,曰,熏虫儿:谓引龙,虫不出也。”北方广泛流传着“二月二,龙抬头;大仓满,小仓流”的民谚。这天还用龙来称呼食物和各种活动。如春饼叫“龙皮”,水饺叫“龙耳”,面条叫“龙须”,米饭叫“龙子”,馄饨叫“龙眼”,肉卷馍叫“懒龙”;甚至做春饼时,还要在饼上做出龙鳞来,叫“龙鳞饼”。
立春到来,这春打六九头的规矩,便是吃春饼,咬下一口,春意正浓,吃春饼称之为 “咬春”这是对春天迫切的渴望,是对寒冬愉快的告别, 薄薄的两张小饼卷着满满的春意盎然,一口咬下去,讨了个好彩头。

    Steps to make [二月二、吃春饼]咬出春天的味道

    • 1.取面粉250克,加入一勺盐
    • 2.用滚烫热水倒入面粉中烫面
    • 3.烫好的面和成面团
    • 4.取一块湿布盖在面团上,饧20分钟左右
    • 5.面团饧好后,揉匀
    • 6.切成一个个小剂子
    • 7.将面剂子用手按扁,取食用油涂刷到按扁的面挤子上
    • 8.把两个面剂子合在一起,再按扁,然后用擀面杖擀成薄饼
    • 9.将薄饼放入平底锅中,锅中不需加油,
    • 10.用小火将饼两边烙好
    • 11.因为是两个面挤子合在一起,所以薄饼在加热过程中,中间就会自动鼓胀,用手一揭,两张饼皮就形成烙好
    • 12.豆芽、鸡蛋、火腿、韭菜、胡萝卜
    • 13.火腿、胡萝卜切丝,韭菜改刀切段,豆芽洗净
    • 14.平底锅倒少许油加热,鸡蛋打好,将鸡蛋液倒入锅内
    • 15.烙成整张鸡蛋薄饼,烙好后取出切成鸡蛋丝备用
    • 16.锅底加油
    • 17.先将胡萝卜丝入锅炒制二、三分钟
    • 18.再将豆芽倒入锅中炒制
    • 19.再加入火腿丝炒制
    • 20.加入少许生抽
    • 21.加盐
    • 22.出锅前将韭菜段倒入锅中,即可出锅
    • 23.出锅照
    • 24.将烙好的饼皮平铺好
    • 25.把炒好的配菜放在饼皮上
    • 26.再放鸡蛋丝
    • 27.将饼皮卷好即可
