传奇美味自己做------翰林焖猪蹄
猪蹄美味又美容,天天叫嚷着要减肥的美女们也难敌它的诱惑。

翰林焖猪蹄是海南省定安县有名的美食,去海南的时候并没有吃,在网上搜了一下,了解了一下大致的做法,也试着想象着做了做,虽然不是正宗的,但爱好美食的我们,什么都可以尝试一下,不是吗?

我总结了一下翰林猪蹄的做法,跟我平时做焖猪蹄最不一样的就是一定要用花生油,为此还专门买了一瓶小的花生油,因为我们平时很少用花生油,为了买小瓶的,还跑了几家超市才买到。

以前总觉得花生油吃了比其它的油更容易长胖,所以买得少,其实现在来看,我的想法是有问题的,油还是换着吃比较好吧。

超市里的花生油都是大瓶的,所以跑了几家才买到小瓶的。

翰林焖猪蹄为什么这么有名呢,原来背后还有这样一个故事:
定安古城,已经有700多年历史,一个西门码头,成为当地的交通枢纽。人来人往间,逐步形成了繁华的小城,吸引了无数人驻足停留,从而催生了当地美食小吃的繁荣。关于定安美食的传说,好像都与文宗皇帝有着千丝万缕的联系,翰林焖猪蹄就是其中一道。
据传说,当时还是王子的图帕睦尔,在品尝到翰林焖猪蹄后,连连称赞好吃,从此以后,一道家常菜冠上了王子赞誉的光环,声名远扬。

Steps to make 传奇美味自己做------翰林焖猪蹄

  • 1.将切块的猪蹄用清水浸泡两个小时,然后洗净。
  • 2.准备好腌制猪蹄用的调味,豆腐乳加腐乳汁捣碎,加在猪蹄里。
  • 3.准备一个橙子,用盐搓洗表皮将其洗净。
  • 4.橙皮削下来备用。
  • 5.橙皮切成块状,也加到猪蹄里,加几小块就行了,我自己感觉今天还加多了点。
  • 6.拌匀,腌制半小时。
  • 7.准备好花生油。
  • 8.锅里倒适量的花生油,油烧热后,加入花椒、香叶、桂皮、草果和八角,小火慢炸出香味。
  • 9.再加入姜蒜翻炒。
  • 10.倒入腌制好的猪蹄,翻炒。
  • 11.加热水没过猪蹄,大火烧开,小火慢炖2个小时,至到猪蹄软烂。
  • 12.大火收汁,盛盘,撒上葱花即可。
