二月二的绿豆焖子
按照传统习俗,二月二,龙抬头那天,是要吃焖子的,绿豆的、红薯淀粉的,浇上芝麻料汁,味道很美的。

  • 蒸鱼豉油3勺

Steps to make 二月二的绿豆焖子

  • 1.芝麻酱,蒜切碎,放入碗中,倒入蒸鱼豉油、醋、盐,分多次添加200克凉白开水,调成料汁备用。
  • 2.绿豆提前一夜泡上。
  • 3.泡好的绿豆放入豆浆机或搅拌机,倒入适量清水,搅打成绿豆糊糊。
  • 4.绿豆糊糊倒出,用纱布过滤。
  • 5.过滤后的绿豆浆,静置沉淀。
  • 6.3勺量的红薯淀粉放入清水拌成水淀粉,1份淀粉5份水。
  • 7.沉淀后的绿豆淀粉浆和红薯水淀粉混合,熬制成熟,期间反复搅拌。
  • 8.倒入盒子里,经过几个小时晾凉凝固。
  • 9.成型凝固后倒扣,用清水浸泡。
  • 10.切块,放入食用油加热,煎至透明。
  • 11.盛出装盘,拌入之前调好的料汁。
  • 12.一人一盘,很美味的。
