简简单单——芝麻排包
方子是以前在海蓝澜的日志中看到的,做过多次了,前几次表面都有挤上蓝莓酱,现在啥酱都没有,只好撒白芝麻了,少了蓝莓酱那层酸酸甜甜的口感,确实是逊色不少。本来想用榴莲果肉做馅料,可以增加一层口感,可惜榴莲还不太熟,口感不好,怕加了以后反倒适得其反,不如就这样吧,简简单单的。

  • 高筋面粉250克
  • 45克
  • 3克
  • 干酵母4克(5克。夏天的缘故)
  • 蛋液25克
  • 110克(酌情增减)
  • 黄油10克

Steps to make 简简单单——芝麻排包

  • 1.后油法,将面团揉搓至扩展阶段
  • 2.揉好的面团放进盆里,盖上保鲜膜,室温下进行第一次发酵
  • 3.当手指沾面粉在面团顶部捅一个洞,洞既不塌陷,也不回缩,而是保持原状的话,发酵就完成了。
  • 4.发酵好的面团取出排气,分割成九等分,揉圆,盖上保鲜膜,冰箱冷藏室里松弛。
  • 5.松弛好的面团擀成椭圆形
  • 6.翻面,就长边从上往下卷起来,接口朝下,排放在烤盘上(我是每做好一个就排放在烤盘上,结果——从步骤7可以看出来,左右不对称,只好拖动一下油纸,让排包生胚处于烤盘正中间)
  • 7.全部做好后,放温暖湿润处进行第二次发酵
  • 8.第二次发酵结束后,表面刷上蛋液,撒上白芝麻
  • 9.烤箱第二层,上下火175度,15分钟左右
  • 10.出炉
