【五香脆皮鱼】--- 换种方式吃鱼肉
很早的时候曾经在一个日志里说起过炸脆皮鱼块的事情,一直拖啊拖,拖了很久才吃这个菜,做好以后放在草稿里又拖啊拖,于是拖到了现在。
这是先腌制再上浆炸制的鱼块,炸好后,外皮很是酥脆。出锅后无论撒上胡椒粉、孜然粉、五香粉...,或者是直接蘸番茄酱、甜辣酱等,都各有风味,做菜做小吃都很适合。

  • 沙鱼肉400克
  • 面粉2汤勺
  • 淀粉2汤勺
  • 五香粉少许
  • 孜然粉少许
  • 料酒1汤勺
  • 食盐2茶勺

Steps to make 【五香脆皮鱼】--- 换种方式吃鱼肉

  • 1.准备好原料。
  • 2.把鱼洗净斜刀切成大小合适的块,调入料酒和盐。
  • 3.加入拍碎的葱段和姜片。
  • 4.抓匀腌制半小时去腥、入味。
  • 5.把面粉和淀粉混合均匀。
  • 6.加入少许水调成较浓稠的面糊,调好的面糊用筷子能拉出线条。
  • 7.加入鱼块里。
  • 8.用筷子翻拌均匀。(也可以一块一块的去面糊里上浆,但这样速度快些)
  • 9.锅中烧热适量油,6成热时依次下入裹好面糊的鱼块。
  • 10.炸约一两分钟至鱼块八九分熟,捞出。
  • 11.锅中的油再次烧热至8分热,下入炸好的鱼块复炸片刻,至表面金黄酥脆。
  • 12.捞出沥干油份即可装盘,然后撒上自己喜欢的调味料。
