荠菜胡萝卜饼
农历十月,已经过了立冬节气了,可接连出现20多度的回暖天气,没感到有一丝寒意。野外的花草生长茂盛,就连在初春时节才能吃到的野菜—荠菜,有的竟然都开始抽薹,要开花了。这就是人们常说到的“十月小阳春”所带来的景象。

老爸钓鱼多半和老钓友们去的郊外。鱼儿不大吃食时,估计老人家就开始走神了。不然,我哪吃得到那些在菜市场上难得一见的野菜呢。

前段时间刚刚腌制了二三十斤雪菜,也是老爸在野地里给摘的。时隔仅一周,还在上班的我就接到老爸的电话,说挖了好多鲜嫩的荠菜••••••

天然之珍-荠菜,是我国传统的野蔬佳品,其营养价值是许多蔬果望尘莫及的。荠菜蛋白质含量在瓜果和叶菜中居上乘;维A含量超过胡萝卜,维B含量是香蕉的4倍,维C含量是桔子的2倍、高于西红柿4倍以上;钙的含量更是超过牛奶、巧克力和大豆,是药膳兼有的时鲜物品。

荠菜善变,不仅颜色变,形状也会变。周围有植物,它就往上长,叶子几乎没有齿,而且颜色碧绿,和菠菜的模样十分相似••••••

荠菜胡萝卜饼,风味鲜美,特别适合经常使用电脑的人群食用,以补充胡萝卜素(维生素A原)的不足。具有和脾、利水、补血、明目的功效。

Steps to make 荠菜胡萝卜饼

  • 1.准备好荠菜、胡萝卜、黑木耳、面粉、鸡蛋。
  • 2.荠菜、胡萝卜、木耳分别洗净,切碎备用。
  • 3.鸡蛋磕破于碗中;加入盐、胡椒粉。
  • 4.面粉筛入碗中。
  • 5.加入适量冷水,调成稍稀点的面糊。
  • 6.平底锅烧热,淋入少许食油。
  • 7.倒入拌好的面糊,用小火煎至面糊凝固。
  • 8.翻一面,煎至熟透,切块装盘。
