【免烤奶酪布丁】
第一眼,你会觉得它并不起眼
没有化妆的外表,只有那淡淡透露出来的“肤色”
是我不喜欢复杂的东东嘛
其实就是懒装饰,每样东西在眼里
都觉得最自然最朴素的时候最美
这奶酪布丁倒是让我大为改观
虽然吧它看似很平凡,口感却有意外的惊喜
奶香浓郁,丝滑冰爽
不是豆腐胜似豆腐

  • 奶油奶酪40克
  • 淡奶油40克
  • 牛奶100克
  • 蛋黄(中等大小)1个
  • 细砂糖15克
  • 吉利丁片2克
  • 香草精少许

Steps to make 【免烤奶酪布丁】

  • 1.牛奶和淡奶油倒入奶锅内,小火加热至微沸腾时关火,滴入香草精(用香草豆荚的就在煮牛奶淡奶油时,刮开香草豆荚加入,离火时捞出香草豆荚)
  • 2.将吉利丁用冷水泡软,捞出放入香草牛奶中,拌匀后盖上锅盖焖5min
  • 3.奶油奶酪软化后隔热水搅拌至顺滑状态
  • 4.同样不要离开热水,加入蛋黄搅拌
  • 5.同样要搅拌至顺滑
  • 6.将香草奶液倒入奶酪蛋黄糊中,充分搅拌均匀
  • 7.将混合好的香草奶酪液过筛一下(尽量不要偷懒哈,过筛下布丁口感比较细腻丝滑)
  • 8.布丁瓶事先用热水焯烫一下,晾干,把奶酪液装入瓶子中(如果要加焦糖层的,这一步做好后就先冷藏3小时左右至凝固,再把焦糖层倒入表层,当然焦糖层也可做在底层哈,反正随个人喜欢啦)
