【日本】照烧鸡肉饭
照烧鸡肉饭制作简单,营养搭配合理。成品酱色诱人,浓郁的酱汁不仅渗透到鸡肉里面,还会融合到每一粒米饭里,鲜香味美。
照烧鸡肉饭宜选三黄鸡做。三黄鸡生长周期短,肉质细嫩、易熟,搭配应季的蔬菜,营养丰富又易于消化吸收。

Steps to make 【日本】照烧鸡肉饭

  • 1.三黄鸡大鸡腿一个,去骨,用刀背拍松鸡肉。用牙签在鸡皮上戳些洞,方便腌制入味。用1克盐加两汤匙料酒腌20分钟。
  • 2.胡萝卜切薄片,用刻模刻出花形,可焯水也可用油略炒一下(方便胡萝卜素溶出)。白玉菇和上海青都焯水备用。也可以搭配其他的蔬菜如西兰花、紫甘蓝等。
  • 3.炒锅放一汤匙油,油五分热时,放入腌制好的鸡腿,小火煎至两面变金黄,盛出。
  • 4.不用洗锅,利用锅中余油煸香煸软洋葱丝(大约30克左右),接着加入两汤匙照烧汁、一大勺温水(约有100克左右)小火炖10分钟左右。(请亲们原谅,我的原图找不见了,只好就拿同样做法的照烧鸡翅代替)
  • 5.照烧汁偏甜口,不喜欢的人可以尝下汤味儿,适当加些盐调味。汁水千万不要收干!要留一些浇在蔬菜和米饭上。米饭盛在小碗里压实,扣在盘中。煮好的鸡腿切块儿,摆放好蔬菜。去掉洋葱丝,浇上锅里剩的汤料。
