三杯鸡
三杯鸡是江西省地方传统名菜,后来流传到台湾省,成了台菜的代表性菜品。因烹制时不放汤水,仅用米酒一杯、猪油或茶油一杯、酱油一杯,故得名。肉香味浓,甜中带咸,咸中带鲜,口感柔韧,咀嚼感强。

2018年9月,被评为“中国菜”之江西十大经典名菜。

Details of ingredients

  • 三黄鸡1只(500g左右)
  • 青椒1个
  • 葱白5段
  • 5片
  • 5瓣
  • 花生油20ml
  • 芝麻油20ml
  • 米酒50ml
  • 生抽30ml
  • 老抽10ml
  • 辣椒1个
  • 冰糖3块
  • 料酒5ml

Steps to make 三杯鸡

  • 1.三黄鸡切成大小合适的块,洗净血水。
  • 2.冷水中放入鸡块,加入料酒,烧开去除浮沫,再次洗净。
  • 3.葱、辣椒切段,姜切片,青椒切块,蒜不用切。
  • 4.锅内倒入花生油和芝麻油烧热,放入葱、姜、蒜、辣椒爆香。
  • 5.倒入鸡块,翻炒几下。
  • 6.加入米酒、生抽、老抽、冰糖,大火烧开转小火焖煮20分钟。
  • 7.放入青椒。
  • 8.大火翻炒收汁。
  • 9.成品图。
