  • 白砂糖(蛋白糊用)40克
  • 淡奶油200克
  • 白砂糖(奶油馅料用)20克

Steps to make 圣诞双色瑞士卷蛋糕,高颜值甜品、充满浓浓圣诞气息的美味。

  • 1.先来做蛋糕体,取蛋黄4个加入,依次加入白砂糖15克、牛奶60克、玉米油35克。
  • 2.每次搅拌均匀乳化以后再加。
  • 3.筛入低筋面粉80克,划Z字搅拌,防止面糊起筋,搅拌至顺滑无颗粒的状态即可。
  • 4.均匀的分成2份备用。
  • 5.取抹茶粉4克加入开水15克,搅拌成浆状。
  • 6.把抹茶浆加入一份蛋黄糊里,搅拌至颜色均匀备用。
  • 7.另一份蛋黄糊里加入红丝绒液3克。
  • 8.搅拌至颜色均匀备用。
  • 9.现在准备打发蛋白糊,取蛋白4个加入柠檬汁几滴,帮助打发。白砂糖40克分三次加入打发。
  • 10.直到提起打蛋器有微微坚挺的小弯钩即可。
  • 11.蛋白糊分成2份,先取一份的1/3加入红色面糊中翻拌均匀,再加入剩下的2/3蛋白糊翻拌均匀。
  • 12.翻拌至颜色均匀后装入裱花袋。
  • 13.抹茶的面糊同样操作一遍,装入裱花袋。
  • 14.烤盘提前装入油纸,烤盘按45°角放置,挤入2种颜色的面糊。挤面糊的时候先挤绿色的面糊,第一次挤不需要挤太多,不然可能会不均匀,后面视情况可以补上去。
  • 15.再挤入红色的面糊,挤好以后稍微震一下烤盘,去掉点大气泡。
  • 16.烤箱150℃提前预热,烤20分钟左右。
  • 17.烤好以后取出先放凉,然后垫一张油纸。
  • 18.翻过来揭掉油纸。
  • 19.再垫一张油纸翻过来。
  • 20.蛋糕胚的一边按斜45°角切一刀,这样待会卷起来的时候会更圆。
  • 21.现在准备馅料,取淡奶油200克,直接加入白砂糖20克,直接用电动打蛋器打发。
  • 22.打发到比较硬的状态,这样会比较好卷。
  • 23.把打发好的淡奶油,抹在放凉的蛋糕体上,先全部抹平。
  • 24.再在离开始卷的地方4厘米左右,把奶油抹成一条高高的小山状,这样可以帮助待会更方便的卷起来。
  • 25.从一头提起硅油纸,然后往前慢慢推,蛋糕体会包到奶油上去。
  • 26.再慢慢的用手收紧卷起来。
  • 27.用刮板帮助收紧。
  • 28.卷好以后粘上不沾胶,放冰箱冷藏定型1小时左右。
  • 29.定型后取出,切掉两边不平整的部分,可以让外形看上去更完美。
  • 30.圣诞双色瑞士卷完成。
