戚风蛋糕
戚风蛋糕是英文Chiffon Cake的音译,属海绵蛋糕类型,也含较少的饱和脂肪。但是由于缺乏牛油蛋糕的浓郁香味,戚风蛋糕通常需要味道浓郁的汁、或加上巧克力、水果等配料。

  • 鸡蛋2个
  • 色拉油25ml
  • 牛奶25ml
  • 砂糖40g
  • 1g
  • 柠檬汁2、3滴

Steps to make 戚风蛋糕

  • 1.准备好原料
  • 2.先将蛋清蛋黄分离,可直接在蛋壳上操作,个人觉得这样比较方便,解放双手,还比较卫生
  • 3.分离好的蛋清蛋黄,尽量做到分离干净
  • 4.蛋黄中加入3分之一砂糖,用手动打蛋器轻轻搅打
  • 5.色拉油分两次假日蛋黄液中,搅拌均匀
  • 6.面粉过筛,我一共筛了两次
  • 7.筛好的面粉加入蛋黄液中,分次加入,每次都要搅拌均匀再继续加面粉
  • 8.搅拌均匀
  • 9.蛋黄液呈现拉丝状即可,不可过于粘稠
  • 10.蛋清中加入2-3滴柠檬汁,有助于打发,中速打至鱼眼泡时加入剩余砂糖的三分之一
  • 11.继续加入砂糖,中速搅打,
  • 12.打发到提起打蛋器出现直立尖角状即可,过分打发容易是成品组织过大
  • 13.取三分之一打发好的蛋白,放入蛋黄液中,以上下切拌的方式轻轻搅拌,不可画圈,容易消泡
  • 14.拌好后,倒入剩余的蛋白中,继续同样方式搅拌
  • 15.倒入模具中,第一次尝试做戚风,将原配方中的用量全部减半,用方形模具先试着做一下
  • 16.放置平整后,大力震几下,震出气泡
  • 17.烤箱150毒预热后,以烤架托入烤箱,上下火150°,40分钟左右,根据自己烤箱而定,随时观察蛋糕变化
  • 18.大概20分钟,蛋糕已经开始爬高了,目测长势不错
  • 19.烤好后,倒扣在烤架上,以免回缩
  • 20.第一次的戚风,目测还不错~
