天使蛋糕—— 电饭锅做

  • 白醋1/4小勺

Steps to make 天使蛋糕—— 电饭锅做

  • 1.准备好材料。
  • 2.蛋白里加入1/4小勺的白醋。
  • 3.先用打蛋器把蛋白打到鱼眼泡状,这时加1/3的糖,继续打。
  • 4.打到蛋白的泡慢慢变得细密,再加1/3的糖,继续打。
  • 5.再打到蛋白比较稠厚,呈现出更细密,有些小纹路的时候,加最后的1/3糖,接着打。
  • 6.打到如图所示,提起打蛋器能拉出小弯钩的、湿性发泡的状态。
  • 7.低粉和玉米淀粉混合过筛,倒入打好的蛋白中。
  • 8.用刮刀把粉和蛋白上下翻拌均匀,拌好的面糊呈现出细腻、稠厚的状态。
  • 9.电饭锅内胆铺油纸,倒入面糊,震出大气泡后插电。
  • 10.450W的普通电饭锅,按‘煮饭’键三五分钟后,跳到‘保温’,保温约半小时,再次按下‘煮饭’键,等跳过‘保温’后再保温约25分钟。
  • 11.出锅倒扣,揭去油纸等凉。因为没有油脂,所以蛋糕不像别的蛋糕有漂亮、金色的底,有着很质扑的颜色。
  • 12.天使蛋糕的口感比较有韧性~~ 来张内部图展示下。
