空心菜梗炒肉丝
小时候,每到空心菜上市的季节,空心菜梗在我家最受欢迎,怎么炒都觉得脆嫩好吃,尤其是妈妈最喜欢炒的一道菜---空心菜梗炒千张。

空心菜,又名蕹菜、无心菜、通心菜。为夏秋季节主要绿叶菜之一。空心菜中的叶绿素有“绿色精灵”之称,可洁齿防龋除口臭,健美皮肤,堪称美容佳品。它的粗纤维素的含量较丰富,这种食用纤维是纤维素、半纤维素、木质素、胶浆及果胶等组成,具有促进肠蠕动、通便解毒作用。可以防暑解热、凉血排毒、防治痢疾。嫩梢中的蛋白质含量比同等量的西红柿高4倍,钙含量比西红柿高12倍多,并含有较多的胡萝卜素。

   空心菜是碱性食物,并含有钾、氯等调节水液平衡的元素,食后可降低肠道的酸度,预防肠道内的菌群失调。在炎热的夏季,很容易因出汗较多引发心慌的症状,空心菜、毛豆等富含钾元素的菜蔬可以多吃点。

Steps to make 空心菜梗炒肉丝

  • 1.准备好千张、香菇、红椒和洋葱。
  • 2.准备好空心菜梗;掐断、从中间撕开,洗净、用少许盐腌制。
  • 3.千张洗净、切细丝。
  • 4.猪肉切丝,用淀粉、生抽拌匀;香菇、洋葱切丝;红椒切小段。
  • 5.锅中油热,将猪肉丝滑散盛起备用。
  • 6.锅中余油,爆香洋葱。
  • 7.菜梗挤净水分,倒入锅中翻炒。
  • 8.倒入香菇,炒匀。
  • 9.倒入千张丝,炒匀。
  • 10.加入盐、生抽,炒匀。
  • 11.倒入滑散的肉丝,炒匀。
  • 12.倒入红椒炒匀;调好味盛入盘中。
