  • 1.牛腩改刀切成3×3厘米的见方块,金瓜洗干净去瓤,切条改刀成4厘米的三角块。
  • 2.锅内加入调和油烧热后下入牛腩炒香,依次下入葱姜蒜,花椒,大料,盐,酱油出香味后加入没过肉的开水。
  • 3.牛肉压制23分钟打开锅盖,下入切好的金瓜块,压制两分钟后别拔气阀焖至两分钟。
  • 4.大火收汁,出锅装盘撒入香葱。
