香菇烧鸡

Steps to make 香菇烧鸡

  • 1.准备好鸡,清洗干净,剁成大块。
  • 2.凉水上锅,加料酒和葱结、姜片焯水三分钟。
  • 3.过凉水清洗干净浮沫。
  • 4.干香菇提前泡发。
  • 5.起锅,小火,加入冰糖和少许水熬糖色。
  • 6.糖成微黄色时。
  • 7.下入鸡块和香菇翻炒上色。
  • 8.加入米椒和姜块翻炒均匀,加入半罐啤酒,大火煮开,转小火焖炖20分钟(根据鸡的老嫩可以调整时间),最后加盐、鸡精、蚝油、胡椒粉、生抽、米酒调味,大火收干汤汁,加入葱段翻炒均匀即可。
  • 9.起锅装盘,美味既成。
