第一次吃这道黄金凤尾虾,女儿还小,带她上必胜客点了这个,一份二十多元才4个虾。回家后我就琢磨开了,当时二十多元可以买1斤多基围虾呢,自己做得省多少钱!
  自己会做后经常做给家人吃,得到他们的赞赏,尤其是公公,他不爱自己剥虾,这道黄金虾刚好合他胃口,这不,今天又点单了。

Steps to make 黄金凤尾虾

  • 1.基围虾剥壳,留尾巴及最后一节壳。用刀开背,注意不要剖成两半。清洗及去虾肠。
  • 2.加盐、料酒、葱段、姜片、蛋清,抓匀腌渍15分钟到半个小时。
  • 3.拣去葱姜,如果虾中水分太多,可倒掉一些。加淀粉抓匀,静置2分钟。
  • 4.盘子里倒半包面包糠,把虾如图两面沾上面包糠,可用小锤敲一敲,或者用手两面按压一下,使面包糠粘得牢一点。粘好面包糠的凤尾虾半成品一个个摆在保鲜膜上,不要叠在一起。
  • 5.锅中倒半锅油,大火烧到油温170℃左右(筷子放入油中,筷子上冒出密集的泡泡),下凤尾虾,改小火炸2分钟,再大火1分钟。
  • 6.炸到表面金黄色,捞出沥油。
  • 7.放在吸油纸上,吸去多余的油。可蘸番茄沙司或椒盐粉食用,也可把椒盐粉撒在黄金凤尾虾上食用。
