温州鱼饼 海鲜糕点
温州鱼饼,是用新鲜海鱼的鱼肉加入淀粉和调味品反复揉砸、经油炸或蒸制而成;早在1921年就已出名了。鱼饼味道十分鲜美,既可以享受鱼肉的鲜美,又省去剔骨的麻烦,尤其适合老人和孩子食用,且营养极为丰富,是温州民间的传统特产,更是家庭、酒店旅游及馈赠亲友的天然鱼肉佳品。

  • 红薯淀粉120g

  • 鸡蛋1个
  • 豆腐1小块
  • 1/2小勺
  • 白胡椒粉1/2小勺
  • 料酒1小勺
  • 白糖1小勺

Steps to make 温州鱼饼 海鲜糕点

  • 1.将龙利鱼或者鲻鱼、鳕鱼、鮸鱼、鲅鱼(俗称马鲛鱼)任何一款鱼,去除内脏,洗净擦干。
  • 2.从鱼的脊背部入刀,剔除鱼头、鱼骨、鱼刺,将纯鱼肉刮出。(去鱼头鱼皮)
  • 3.刮出来的鱼肉吸干水份,剁成鱼茸,加入所有的辅料拌匀,带上乳胶手套,用手抓拌揉搓鱼肉8-10分钟至有粘手韧劲为止。
  • 4.最后揉捏成很柔韧的鱼肉泥。
  • 5.在手掌中沾点水,将鱼肉泥做成长条形或者椭圆形的饼,用蒸屉大火蒸12-14分钟。
  • 6.取出晾凉;在油锅中煎至两面金黄色,捞出沥干多余的油,切片装盘。
  • 7.食用时可以蘸点酱油醋,也可以切成细条炒菜或烧汤。特点:味道鲜美,营养丰富;剔除了鱼骨刺后,吃起来更Q,更筋道,没有腥味;尤其适合小孩子吃,既能多让小孩子吃鱼肉又没有挑刺的麻烦。
