紫薯松糕
查看了好多方子,最后参照如莲静心的方子,这是第二做了,第一次做的就很成功,唯一欠缺的就是水蒸气滴落在松糕上了,影响美观,但口感非常好,蓬松柔软又有嚼劲,这次做的用湿屉布盖在膜具上面了,非常不错,由于紫薯的含水量不同,要根据个人的实际情况增减,搓好的紫薯米粉颗粒,用手轻轻攥一下就能成团,用手一碰又能散开的状态,这个糖的量稍微甜了一些,我个人比较喜好,其它人不喜欢太甜的可减一些。

  • 糯米粉30g
  • 紫薯泥60g
  • 牛奶60毫升
  • 白砂糖20g

Steps to make 紫薯松糕

  • 1.粘米粉、糯米粉和糖粉混合一起放入小盆里。
  • 2.紫薯去皮切片蒸熟,取出压成泥。
  • 3.加入米粉中,再慢慢加入牛奶,拌均后用手搓成小颗粒。
  • 4.搓好的米粉颗粒用手抓起,轻轻攥一下就能成团,再用手碰一下又能散开。
  • 5.用稍粗一些的筛网过筛,过筛后的紫薯米粉更细腻。
  • 6.六寸膜具刷油,将糕粉的一半舀在膜具底部,不要按压,用刮板轻轻刮平。
  • 7.将豆沙馅用保鲜膜包好,擀成膜具大小。轻轻的盖在糕粉上面。
  • 8.剩下的铺在最上面,轻轻刮平,同样不要按压。
  • 9.锅中水开后放入膜具,屉布润湿攥干后盖在膜具上面。防止水蒸气滴落,蒸45分钟。
  • 10.稍凉后拿掉膜具。
  • 11.加点糖桂花,切块就可以食用了。
  • 12.成品图。
