自制豌豆凉粉

  • 果仁碎适量(花生、核桃、巴旦木)
  • 1小勺
  • 香醋2勺
  • 味极鲜1勺
  • 亚麻籽油+香油1勺(混合油)

Steps to make 自制豌豆凉粉

  • 1.准备豌豆淀粉100克。
  • 2.锅中加900克清水,加少许盐,倒入豌豆淀粉,中火不停搅拌(也可将豌豆淀粉提前用水冲成糊状倒入水中)。
  • 3.搅拌至冒大泡,转小火再搅拌三分钟(具体时间取决于个人喜欢吃凉粉的软硬度)。
  • 4.倒入容器中,室温静置至凝固(大约4小时左右)。
  • 5.凝固后倒扣在案板上。
  • 6.用刮刀刨成丝(也可切成条块状)。
  • 7.装入盘中,放上葱花、蒜末、辣椒粒、白芝麻、果仁碎(花生、核桃、巴旦木)。
  • 8.将炝过花椒的热油泼在食材上激发出香味。
  • 9.根据个人口味加适量味极鲜、香醋(或陈醋),再淋上亚麻籽油+香油(混合油)。
