折腾完广式的月饼就对冰皮月饼产生了浓厚的兴趣,因为觉得冰皮月饼实在是太漂亮了,就算不吃,做好后放在那里,我都会觉得很幸福,所以就一直想试,但是折腾完广式人好懒又累,所以用的是冰皮粉做的,真的太美了,成品会让人实不得吃的。

  • 白油20克
  • 冷开水110克
  • 熟糯米粉20克

Steps to make 五彩缤纷的冰皮月饼

  • 1.准备好做月饼皮的所有材料。
  • 2.冰皮粉用冷开水拌匀。
  • 3.用手揉均匀,揉至表面光滑、有弹性。
  • 4.将白油加入揉好的面团中。
  • 5.再次揉到表面光滑、有弹性。要加色粉的就可以在这一步分小份,加上喜欢的色粉了。
  • 6.揉好的面团饧发20分钟后,分成25克一份,馅料也分成25克一份。
  • 7.月饼皮用揉搓几下,按扁放上馅。
  • 8.慢慢推着一点一点往上包。
  • 9.包好后,收口处置于月饼底部。
  • 10.包好的月饼胚表面粘上熟糯米粉,放进模具中。
  • 11.轻轻按压,压制成型即可。
  • 12.做好的月饼密封后可以放冷藏或冷冻保存。
