自制蒜香肠
香肠是一道传统肉类美食。既可购买,也可自制,首次试做香(蒜)肠,所有调料均为自调馅料,成品出锅又晾了一天,自制香肠用料新鲜,干净卫生、无任何添加剂,而且色泽好、口感香、不逊外卖。

  • 淀粉50g
  • 葱花、姜、花椒水半碗

Steps to make 自制蒜香肠

  • 1.将瘦7肥3的肉切成小薄片,将1.5斤肉分3次用搅拌打成肉泥。
  • 2.料理机打成的肉泥(其实应打成颗粒状,但此机无那种功能)。
  • 3.全部打好的肉馅。
  • 4.放入生抽,老抽、料酒、蚝油、五香粉、花椒粉、姜粉、胡椒粉、盐、糖、蒜、鸡精放入肉馅中。
  • 5.倒入葱花、姜、花椒粉料水半碗。
  • 6.搅拌均匀。
  • 7.加入适量的红曲粉。
  • 8.加入约50克左右的淀粉。
  • 9.搅拌上劲,所有的调料均未过称量(估的)。
  • 10.肠衣浸泡20分钟,再反复里外冲洗干净。
  • 11.肉馅放入灌肠器中,将肠衣套在粗管上,全套上最后打个结。
  • 12.将馅料均匀的灌入肠衣中,扎上线绳、每个香肠扎几个孔。
  • 13.将灌好的香畅放入笼屉中(屉铺油纸),盖上盖蒸30分钟。
  • 14.我蒸的时间有些长了(40分钟),其实30分钟即可,成品效果不错,关键家人说:“特别好吃”!
