Steps to make 广式月饼-月饼季节来临啦

  • 1.枧水,药店买的小苏打1g兑水3g
  • 2.枧水和糖浆混合均匀
  • 3.加油,用打蛋器打匀
  • 4.粉分几次筛入,筛一点,搅拌均匀
  • 5.混合成团,有点硬,盖上保鲜膜,冰箱里放上几个小时,就软了
  • 6.准备点手粉,糯米粉,微波炉转2分钟,取出搅拌再转1分钟取出。没有生粉的味道就好了。防黏
  • 7.我做的25g的月饼,用2:8的比例。那么皮5g,馅20g可以用3:7馅料
  • 8.皮子沾点手粉,搓圆,按扁,包入馅料。这里是水蜜桃馅的,比较黏手,用手指沾了手粉,左手拇指按馅,右手推皮子,慢慢包。皮子的延展行非常好,耐心点就能包好。
  • 9.月饼模子按出形状,用刮板帮忙,转移到烤盘里
  • 10.喷点水,烤箱200度8分钟取出黄色的是奶黄馅的
  • 11.刷上鸡蛋液,再烤5~8分钟,上色
  • 12.刚出炉的月饼,表皮是硬的,彻底放凉以后,包上保鲜膜,放置1~2天回油变软就好吃了。
  • 13.这是24小时以后回油切开的水蜜桃馅月饼
