1、鸭掌买回来要用清水泡几个小时再煮,这样可以让煮后的鸭掌更白。
2、鸭掌煮好捞出后立即用冰水浸泡,第一次用冰水浸泡半小时。
3、然后换多几次冰水冲洗,去除鸭掌的油脂。
4、倒掉用清水冲洗后从新换上干净的冰水,加入100克的白醋放入冰箱冷冻层冰半小时左右,白醋多一点没关系,不会形响成品的口感和酸度。
5、最后一点就是加入泡椒后放入冰箱冷藏的时间要足够长,时间越长鸭掌越雪白、剔透。
    此法也可适用于泡椒风爪!
