    Steps to make 冰花煎饺

    • 1.面粉加入适量温水和成软面团。
    • 2.罩上保鲜膜松弛30分钟备用。
    • 3.肉馅中加入鸡蛋1个、盐、胡椒粉、料酒,拌匀腌制15分钟。
    • 4.葱姜切碎放入料理机打成葱姜水;香芹择洗干净,切碎备用。
    • 5.葱姜水调入肉馅中。
    • 6.放入香芹、油搅拌至上劲。
    • 7.把松弛好的面团再揉几下,捋成长条切成剂子。
    • 8.擀好面皮包入馅料,用中指把面皮按向馅料方向,用手捏挤,然后用大姆指和食指托起两旁的面皮,只其形成W形。大姆指和食指向前来回捏动即可成为柳叶形。
    • 9.包好的柳叶饺生坯。
    • 10.清水中加入生粉调匀。(水、生粉比例为2:1)
    • 11.平底锅倒少许油,加热后,把饺子一个个码在锅底,小火加热让油把饺子底部煎脆。
    • 12.把淀粉水倒入锅中,盖锅盖大火烧开,中火加热。
    • 13.煎至约5分钟至水收干,倒扣于盘中即可食用。
