牛肉牛筋丸粄汤(河粉汤)

Steps to make 牛肉牛筋丸粄汤(河粉汤)

  • 1.切好适量牛肉,加入适量油、盐;少量生粉、酱油,伴匀腌制待用。(牛肉切薄一些口感更好)
  • 2.香葱洗干净,切成葱花待用。
  • 3.用煮锅煮好适应的水,水开后,把水粄(河粉)放进锅里烫软,捞起放进碗里。(水粄是我老家的一种叫法,也就是河粉,怀念家乡的味道,所以继续称之为“水粄”。注意:水粄稍微煮软就可以,太烂影响口感)
  • 4.把牛筋丸加入锅中煮。
  • 5.往锅中加入适量地都东菜,跟牛筋丸一起煮,汤的味道更好。
  • 6.牛筋丸煮好后,捞起放进碗里。(不捞起来也可以,捞起来只是为了更加方便烫牛肉,捞掉肉的漂浮物,这样汤的味道更清甜。)
  • 7.汤继续大火煮开,放入牛肉,牛肉烫变色即可(烫太久牛肉会煮老,口感没那么好),捞掉汤上的漂浮物,加入葱花以及适量的盐,汤即煮好。
  • 8.把汤加入刚刚煮好的水粄那里,一碗粄汤(河粉汤)即可享用,简单清淡。(由于没有准备青菜,喜欢的还可以加一些生菜,也很搭配)
