Steps to make 【湘乳烧鲈鱼】神厨让你目瞪口呆

  • 1.选用活鲈鱼一条,擦干水份,用勺子把刮去鱼鳞,去鱼鳞将鲈鱼洗净,用抹布沾干水份。用两双筷子从鱼鳃上部穿过插入鱼肚,右手握紧筷子,左手抓住鱼身相向用力,拉出鱼鳃和内脏,再将鱼清洗干净。
  • 2.在鱼背上打上工字花刀,将鱼头、鱼身、鱼尾用盐抹均匀,挂起沥干水份。
  • 3.选用红油豆腐乳四块,用筷子搅碎备用。
  • 4.锅烧热,去油光锅。转小火再加入适量冷油,锅四周和底部撒入少量的盐,防止鱼粘锅。放入鲈鱼,转动锅子,煎到鱼的每个部位,一面煎好后将鱼翻面,同样的方法煎每个部位。
  • 5.加入适量黄酒,盖上锅盖焖15秒。
  • 6.开盖加入适量的水、豆腐乳、姜丝、小红椒、老抽,盖上锅盖焖3分钟,3分钟后转成中小火,火大了会干汤。用滚汤浇烫鱼的上面一样可以将鱼弄熟(鱼煮后会软,菜鸟就别去翻了,免得弄烂了)。再加入适量的胡椒粉和鸡精,继续用滚汤浇烫,每个部位都要浇到。这样一道美味的湘乳烧鲈鱼就完成了。
