Steps to make 炸春卷

  • 1.香菇温水泡发,洗净沥水切丝备用。
  • 2.韭菜洗净切寸段备用。
  • 3.瘦肉切丝加入淀粉、料酒抓匀。
  • 4.油锅烧热下肉丝划散。
  • 5.倒入韭菜、香菇翻炒,加入盐和鸡精翻炒均匀即可,关火晾凉即成春卷馅料。
  • 6.用小蝶装入少量面粉加入适量的水调成稀面糊。
  • 7.取一张春卷皮,放上适量春卷陷料。
  • 8.如图所示包好,封口处粘上少量面糊增加粘性。
  • 9.锅中放入足够的油大火烧热,放入做好的春卷后改中小火炸制。
  • 10.一面炸至金黄色翻面炸另一面。
  • 11.沥干多余的油。
  • 12.盘中垫上吸油纸,装盘,晾凉开动。
