  • 大葱段2块
  • 料酒1大勺
  • 蒜末半个

  • 蚝油1平勺
  • 蛋清1个
  • 淀粉1平勺
  • 普通面粉1平勺

  • 1.剁好的排骨600克,洗干净稍微浸泡10分钟。
  • 2.排骨焯水记得冷水下锅,加入姜片2片、大葱段2块、料酒1大勺。
  • 3.煮开十分钟左右。
  • 4.捞出煮好的排骨,泡在温水里面。
  • 5.洗干净排骨表面的血沫,沥干水分后备用。
  • 6.大蒜半个弄成蒜沫,生姜1片弄成姜沫,盐小半勺、鸡精小半勺、生抽3平勺、蚝油1平勺,先放一起。
  • 7.加入排骨里。
  • 8.搅拌均匀。
  • 9.加入蛋清1个。
  • 10.搅拌均匀,腌制半小时左右。
  • 11.腌好以后,加入淀粉1平勺、普通面粉1平勺。
  • 12.搅拌均匀。
  • 13.加入植物油1平勺。
  • 14.搅拌均匀,这样炸的时候可以锁住汁水。
  • 15.油温加热到7成热,放入排骨先炸至表面金黄,再中小火炸至酥脆捞出。
  • 16.捞出放置5分钟,再把油温加热至8成热,加入复炸30秒会更酥脆。
  • 17.家常蒜香骨,完成O(∩_∩)O。
