菠菜炸酱面

Steps to make 菠菜炸酱面

  • 1.菠菜洗净焯水后切寸段,加少许盐和适量水放入料理机内
  • 2.搅打成泥状。
  • 3.将菠菜泥汁,面粉加少许盐混合,和成光滑均匀的面团,盖上保鲜膜,醒30分钟
  • 4.葱姜切成末,姜要多一点。
  • 5.取适量豆瓣酱和甜面酱混合,加入等量水搅拌均匀。
  • 6.热锅凉油,油要多一些,下入五花肉丁煸一下。
  • 7.加入葱姜末炒出香味。
  • 8.加入调好的酱汁。
  • 9.小火朝一个方向不断搅拌,约15分钟至20分钟。
  • 10.待酱变颜色,发出声音后,加入少许糖提鲜。
  • 11.撒上适量熟芝麻搅匀关火。
  • 12.趁热撒上葱花拌匀,炸酱就做好了
  • 13.醒好的面团擀成厚约0.3厘米的长方形片
  • 14.撒上面粉后叠成三折。
  • 15.依个人喜好切成适合的宽度
  • 16.切好的面条撒上面粉再摊开
  • 17.用双手由着面条的筋性轻轻拉长。
  • 18.分成合适的等份,以方便食取或冷冻保存。
  • 19.锅中添入足量水,烧开后下入面条用筷子挑散,再用中小火煮熟
  • 20.捞出盛入碗中。浇上炸酱配上黄瓜丝或其它配菜即可。
