苏子馅月饼
去年朋友送来了苏子馅月饼,香的几乎没齿难忘。今年老早就从姐姐家拿来了自家种的苏子,中秋节早早开工,做上一大盘送给好朋友,当然是迎来一片赞扬声,约好明年还要苏子馅!

  • 中筋粉350g
  • 转化糖浆250g
  • 枧水4g
  • 橄榄油85g
  • 奶粉15g
  • 苏子馅700g
  • 熟糯米粉10g
  • 蛋黄1个

Steps to make 苏子馅月饼

  • 1.备齐材料
  • 2.将转化糖浆、橄榄油、枧水放在容器里搅拌均匀
  • 3.筛入面粉和奶粉
  • 4.切拌成面团后装入食品袋揉匀静止
  • 5.备好的苏子馅30g一个,静止好的面团分成25g一个的小剂子揉圆
  • 6.带一次性手套,取一个面团压扁后包入馅,虎口慢慢向上推移,使面皮均匀的包裹住馅料,收口搓圆,放入模具挤压成型,如果不易脱模,放入模具之前面团顶部少粘一点熟糯米粉就OK啦
  • 7.码入烤盘喷一点点清水
  • 8.上火200度下火180度预热,入烤箱烤10分钟
  • 9.蛋黄少兑一点水,取出月饼,薄薄的刷一层蛋黄液,四周不刷
  • 10.入烤箱继续烤10分钟左右
  • 11.出炉
  • 12.晾凉密封保存,等待回油变软即可食用。
