Steps to make 百花照福——蜜饯月饼

  • 1.糖浆加色拉油、碱水放在容器中
  • 2.用打蛋器把糖浆、色拉油和碱水溶液打发
  • 3.在溶液中加入面粉
  • 4.和成面团,放置2小时
  • 5.把面团根据模具大小分成若干份
  • 6.把蜜饯也分成和面团数量相等的分量
  • 7.取一份的面团,按圆压成小薄片
  • 8.取一份的蜜饯放到面片上
  • 9.包好馅料,封口,沾上少许干面粉
  • 10.把面团放到月饼模具里压实,让整个面团充满模具里
  • 11.案板上撒少许干面粉,把月饼模具倒过来,在案板上轻轻磕一下,脱模
  • 12.全部做好的月饼胚
  • 13.月饼生胚放在烤盘上,表面刷水,入预热过的烤箱第二层,以210℃烤5分钟取出,刷少许蛋黄水(只刷表面,不刷纹路凹陷处),再继续烤5分钟,转150℃烤10分钟即可。烤好的月饼放凉后,装到保鲜袋里密封,回油2~3天即可食用。
