广式椰蓉月饼

  • 奶粉60克
  • 糖粉88克
  • 熟糯米粉50克

Steps to make 广式椰蓉月饼

  • 1.首先制作馅料,将糯米粉放入锅中开小火,炒至糯米粉发出香味颜色稍微变黄即可,放凉备用
  • 2.黄油提前软化好加入糖粉,放入厨师机中搅拌均匀
  • 3.在搅拌好的黄油中加入鸡蛋(去壳后100克)继续搅拌均匀
  • 4.再加入炒好的糯米粉,奶粉,椰蓉就行搅拌
  • 5.搅拌好的椰蓉馅放冰箱里冷藏,直到馅料变硬就可以用了
  • 6.然后准备做面团的材料,广式月饼预拌粉,酥油,糖浆(注意预拌粉是可以不加枧水的)
  • 7.先将酥油和转化糖浆搅拌均匀
  • 8.再加入月饼预拌粉
  • 9.用刮刀将面团和均匀,最好是搅拌到面团非常有光泽
  • 10.然后将面团用保鲜膜盖上松弛1小时
  • 11.将椰蓉馅和面团分别称重,松弛好的面团称重,20克一个,椰蓉馅43克一个,最好将面团和包好的馅料用保鲜膜盖上
  • 12.取一份面团先在手上反复揉一揉,然后包上馅料,尽量使面皮紧贴馅料包好,使面皮薄厚一致,再将收口捏紧
  • 13.包好的月饼生坯可以在手上调整一下使面皮更均匀一些,这样按压出来的月饼不易露馅
  • 14.将月饼生坯上滚一下面粉,(不易过多)放入模具中按压
  • 15.完成后的月饼生坯,放入烤盘
  • 16.烤箱预热上下火加热200度,将喷水壶高举在月饼生坯上喷两下,(不要喷多花纹会变前的)放入烤箱中层烤5分钟
  • 17.取出放凉以后,刷蛋液!先将毛刷在碗边多挤几下,用很少的蛋液在花纹上刷一层即可
  • 18.再将烤箱温度调整到180度,上下加热中层烤15分钟左右,一盘美美的月饼就烤好了!
  • 19.成品图,由于时间原因月饼还烤好还没有回油呢!见谅
