说到广式月饼,估计人民群众最为喜闻乐见的就是经典的蛋黄莲蓉月饼了,不管其他的网红月饼怎么花样翻新抓人眼球,总归只是昙花一现,很少有能够稳坐交椅独领风骚数十年的,看来和这种老牌掰手腕,后辈们的资历还是不止一点的浅啊哈哈~~
顺便啰嗦点技术方面的,蛋黄如果现取的话最好晾干一点,而且,一定要生蛋黄包进去才会容易流油哦!

  • 面粉250g
  • 转化糖浆190g
  • 花生油70g
  • 枧水3g

  • 时间三刻钟

Steps to make #新良首届烘焙大赛#蛋黄莲蓉广式月饼

  • 1.找一个干净的大碗,加入190g转化糖浆
  • 2.3g枧水加入70g花生油,使劲搅拌到完全融合
  • 3.筛入250g低筋面粉,揉成面团之后静置1小时
  • 4.按照皮和馅料3比7的比例,称出来合适重量的咸蛋黄和莲蓉,把咸蛋黄包裹在莲蓉里面
  • 5.慢慢的把皮裹住整个莲蓉馅
  • 6.皮包裹要均匀,这是包好之后的样子
  • 7.放到模具里面,压出花型
  • 8.烤箱预热好,上下火中间层175度先烘烤10分钟定型
  • 9.一个蛋黄加1大勺清水,混合均匀之后涂在月饼表面
  • 10.继续上下火中间层,15分钟即可!
