广式火腿五仁月饼
又是一年的中秋节到了。广式月饼很多家庭都自己动手做,传统的月饼多数甜,换一个口味,五仁月饼好吃既营养,不会那么油腻。今天就来介绍广式火腿五仁月饼,小时候的味道,满满的回忆。PS:主料是五仁月饼的月饼皮料,辅料为五仁月饼的馅料。另外,还需要糕粉,防止粘。月饼模具是65克,皮20克,馅45克。
我拍照片的时候月饼是刚刚烤出,很硬,放二天回油就会软。

  • 月饼粉100克
  • 转换糖浆80克
  • 枧水2个
  • 花生油25克
  • 黑芝麻20克
  • 白芝麻20克
  • 葵花籽仁40克
  • 瓜子仁60克
  • 花生仁60克
  • 糖冬瓜50克
  • 桔饼20克
  • 细白砂糖50克
  • 椰蓉30克
  • 70克
  • 高度白酒10克
  • 花生油25克
  • 冰肉100克
  • 火腿50克
  • 糕粉100克
  • 3克
  • 蛋清1个

Steps to make 广式火腿五仁月饼

  • 1.糖冬瓜,桔饼,切碎,拌均;
  • 2.把所有坚果(黑芝麻、白芝麻、葵花籽人、瓜子仁、花生仁)烤熟,研碎,拌均;
  • 3.切碎火腿,与冰肉拌均;
  • 4. 步骤1+2+3,加入拌均,加入细白砂糖、椰蓉,拌均,加入高度白酒、花生油、水、糕粉,拌均;
  • 5. 馅做好揉成团,分45克一等份;
  • 6.转换糖浆、枧水、花生油,拌均;
  • 7.加入月饼粉,拌均,揉成团;
  • 8.揉好的面团,用保鲜膜包裹,放1-2小时;
  • 9.再次揉任,分20克一等份;
  • 10.擀成薄薄的皮;
  • 11.放入五仁馅;
  • 12.合口,揉均;
  • 13. 放入模具中压出模型,做出的月饼放入烤盘,均匀喷上水,PS:喷水是放置爆开
  • 14.烤箱预热200度,烤5分钟,取出,均匀刷一遍蛋清;再烤15分钟即可。
