拜拜蛋糕
拜拜蛋糕类似戚风,但面糊的做法又不同于戚风,传说是台湾人家过年过节用来拜拜的,口感非常细腻柔软。

  • 低粉100克
  • 牛奶70克
  • 玉米油40克
  • 蛋黄85克
  • 蛋白170克
  • 细砂糖85克

Steps to make 拜拜蛋糕

  • 1.玉米油和牛奶放同一容器里,加入过筛的低粉。
  • 2.搅拌均匀后加入蛋黄。
  • 3.再搅拌成均匀的蛋黄糊。
  • 4.蛋白盛入无水无油盆内,用打蛋器搅打呈粗泡状,分3次加入细砂糖,以快速方法搅打后蛋白淡渐呈发泡状态,搅打的同时明显出现纹路状,最后呈小弯勾的九分发状态即可。
  • 5.先取1/3的打发蛋白加在蛋黄糊内用刮刀稍微拌和。
  • 6.再加入剩余的蛋白,轻轻地从容器底部刮起拌匀。
  • 7.盛入模具中,轻轻震出大气泡。我用的4寸模,正好6个。
  • 8.烤箱预热,先用170度烤10分钟左右至表面结皮上色,取出用刀子在蛋糕表面划十字,然后放回烤箱,温度转成150度,再烘焙约20分钟。(划刀口时动作要快一点,刀口才又容易又漂亮,我弄的太慢了,到最后即不好划又不好看。)
  • 9.烤好的蛋糕要悬空倒扣放凉。
  • 10.这款蛋糕特别细腻特别松软。
