自制麻辣萝卜干
深秋时节,是制作一些酱腌菜最好的时候,现在正是萝卜大量上市的季节,做上一坛美味的萝卜干,在寒冷的冬天也能吃上美味可口的蔬菜是最合适不过的了;我婆婆在这方面最有经验,她做的萝卜干非常受欢迎,拿出去总是一抢而空,我这次就参照她的方法,自制了麻辣诱人的萝卜干,味道赞极了~~~~

她做萝卜干一般选用青皮萝卜,水份较少,不需要晒很长时间,如果选用水份较大的萝卜,需要进行脱水处理,才能达到脆爽的口感;我用的萝卜是孩子们从郊外摘回来的,什么形状都有,品种也不一样,哈哈,做出来的颜色也很特

Steps to make 自制麻辣萝卜干

  • 1.首先将萝卜洗净,晾干水份
  • 2.再切成筷子粗细的萝卜条(孩子们拔的心里美萝卜居多,切出来颜色很漂亮)
  • 3.将萝卜放在太阳下晒上一天,(天气不好可多晒两天)
  • 4.晒至发焉即可
  • 5.这段时间就可以准备调料了,分别将花椒、辣椒再锅里炒香后,用料理机打成花椒面和辣椒面备用
  • 6.晒好的萝卜干放在案板上,放一些盐,用手不停的搓揉
  • 7.将剩下的一些水分搓出来,还能让萝卜入味,(要使劲搓哦,萝卜的脆爽的关键所在)
  • 8.将盐,味精,花椒面,辣椒面混匀
  • 9.将这些调料倒在萝卜里拌匀即可
  • 10.拌好后,存放在密封的坛子里放一段时间再吃,越存越香;立刻吃味道也不错
